Coconut Pie
One of my favorite blogging friends is Happy Domesticity. Her recipes are very diverse, and she hits everything from dessert to main courses to sides and veg. This one from her is a dessert… and the second I saw her post on it I knew I had to make it!
You’d think that after waiting a few months to make it I would’ve actually given it some more of the time it deserved, but no. Not me. I take it out of the oven and completely forgot about it! Oops! But check this out – How easy is this?
Ingredients:
- 4 Large/Extra-Large eggs
- ¼ cup melted butter
- 1 cup sugar
- ½ cup AP flour
- ½ tsp baking powder
- 2 cups whole milk
- 1 cup shredded coconut
- 1 tsp vanilla extract
Directions:
- Preheat oven to 325 degrees F.
- Mix all ingredients together in a large mixing bowl.
- Pour into a greased deep pie dish
- Bake for 1 hour or until golden brown.
Tips:
- I just have a regular pie dish, so I put a baking sheet under it in the oven just in case it dripped (but it didn’t)
That’s it. Can’t get much easier than that, right?
I went a little overboard with the mixing, but simple things amuse me
It smelled divine and the top browned so nicely, giving it a warm crunchy texture… but the inside was a little bit runny. I think I freaked out a bit when I saw how brown the top was getting and I pulled it out 10 minutes early… My intention was to put it the in refrigerator to get firmer and try it again the next day, but of course I forgot and left it out on the counter. Oops!
